Taiwanese Pancake with Egg – 蛋餅 (Dàn bǐng)

This Taiwanese pancake recipe is a common dish a lot people will cook at their home for breakfast. The way the pancake flour is made really makes this dish taste delicious. Enjoy!

  • 1. Chop the green onion stalks.
  • 2. In a bowl, add 1 cup of all purpose flour, Season with salt, olive oil, and 1 tsp of brown sugar
  • 3. Stir 1/2 cup of hot water into the bowl of flour until a dough forms. Knead the dough for about 10 minutes. Then, set the dough aside and let it rest for 10-30 minutes. Cover the dough with bowl.
  • 4. Crack 3 eggs in a small bowl. Season the eggs with salt and pepper. Beat the eggs with a fork.
  • 5. After the dough has been resting for 10-30 minutes, split the dough in half. Add the chopped green onions into the dough and flatten out with a rolling pin until the dough becomes a pancake.
  • 6. Heat a frying pan and add olive oil. Fry the pancake on both sides until lightly toasted. Remove from the pan when cooked and set aside on a plate.
  • 7. Add some chopped green onions to the beaten eggs. Pour the egg and green onion mixture into the frying pan. Before the egg cooks completely, add the pancake and let the egg and pancake fuse together.
  • 8. When the egg is completely cooked, start to roll the pancake with egg. Remove from heat and put on a plate.
  • 9. Drizzle soy paste or a sauce of your choice onto the pancake and serve while warm.
  • 10. Repeat for the other half of the dough.
  • 11. Enjoy!
