Taiwanese Fried Chicken Steak – 大雞排 (Dà jī pái)

  • 1. Slice the chicken breast or thigh in half through the middle.
  • 2. In a large bowl, combine 3 cups of water, 1/2 cup of rice wine, 1 cup of soy sauce, 2 tablespoons of grated ginger, 2 tablespoons of five spice powder, 3 tablespoons of brown sugar, and 2 tablespoons of Chinese barbecue sauce. Add a generous amount of salt to the marinate.
  • 3. Mix the ingredients together with a whisk. Add the chicken to the marinate and let it soak in the marinate for at least 30 minutes.
  • 4. After at least 30 minutes, take the chicken out of the marinate and set it aside on a plate.
  • 5. Then, add 1 cup of cornstarch to the marinade and mix well with a whisk.
  • 6. Add 3 eggs to the mixture and mix again.
  • 7. In a baking pan or a large plate, measure out a 2 to 1 ratio of sweet potato flour to panko bread crumbs. Mix the flour and bread crumbs together.
  • 8. Take a chicken steak and dip into the marinade with cornstarch and eggs. Then, put it in the baking pan with the sweet potato flour and panko bread crumbs mixture
  • 9. Make sure the chicken is well coated with the dry mixture. Repeat for the rest of the chicken steaks.
  • 10. Now the chicken steaks are ready to be fried! Pour your favorite frying oil into a frying pan. Let the oil warm up on high heat.
  • 11. When the oil is hot enough, fry the chicken steaks for 6-7 minutes or until golden brown on the outside.
  • 12. When the chicken steak is finished frying, take it out of the pan and drain the oil. Let the chicken steak rest on a place covered with a paper towel to soak up the excess oil.
  • 13. Sprinkle a generous amount of salt and pepper on the chicken steak.
  • 14. Serve and enjoy!
